From treadmill to paleo (ish)

I am blessed to be able to work at home. I take phone calls for Azure Standard, a fabulous company, that I've been a customer of for two years before I became an employee. In my home office, I walk 1mph on a treadmill at my desk for a few hours a day while on the phone. I started using the treadmill the first of July 2016. As of September 10, I have gone from 170lbs to 155lbs. My weight goal is to get down to 130lbs. But my real goal is a lifestyle change of incorporating exercise daily for not only physical benefits, but also mental and spiritual. Part of that was by meshing exercise with working byway of a homemade treadmill desk and then walking down my tree-covered, gravel driveway to the mailbox - 1 mile round trip once I clocked out. 

 

While I consider myself a pretty healthy eater, I still have my weaknesses. Grains, salt, cheese/dairy and sugar are challenges I am taking on slowly...trying to replace each of my weaknesses with a paleo-ish substitute. 

 

My plan was to make paleo egg muffins to freeze...but I got lazy and just made a no-name, paleo, carb-free bowl of goodness that I was able to eat on for a couple of days. It was filling and tasty! :)

 

The ingredients included:

  • Diestel Turkey Breakfast Sausage (Azure Standard)

  • Stahlbush Island Frozen Spinach (Azure Standard. It comes in biodegradable packaging)

  • Sliced, Black Olives (Azure Standard)

  • All-Purpose, Salt-Free Seasoning (Azure Standard)

  • Organic  Paesana Portobella Mushrooms (Thrive Market)

  • Canola Oil (not a fan of canola oil...but we have some to finish up)

  • My homemade Paremesean Shaker Cheez (last post)
